Enjoy a Guilt Free Thanksgiving

When the temperature starts to drop and you can smell fall in the air, it’s time for warm substantial fare. This simple, nutritious and delicious recipe comes from CHLI’s Paulette Lambert, R.D, CDE. Hearty, healthy barley, white meat of turkey, onions, apples, and cranberries along with spices and seasonings all come together beautifully. After only a few minutes of prep time in the morning, you will have a Thanksgiving feast without all the work!

Slow Cooker Turkey Breast With Barley

Recipe:

  • 1 1/2 cups pearled barley, shakes in cold water for 2-24 hours then drained
  • 1 onion, peeled and chopped
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 unpeeled apples, cored and chopped
  • 3 cups organic, reduced-sodium, fat-free chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon seal salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon poultry seasoning
  • 21/2 – 3 pounds boneless turkey breast, unthawed
  • 2 tablespoons chopped fresh parsley

Directions

1. Place soaked barley, onion, cranberries, pecans, apples, broth, thyme, salt, pepper, and poultry seasoning in slow cooker. Mix well.

2. Place turkey breast on top of barley mixture. Cover slow cooker and cook on low for 8-9 hours until turkey is thoroughly cooked and barley is tender.

3. Remove turkey from slow cooker. Remove skin and slice. Spoon barley on platter, top with sliced turkey and sprinkle with parsle

Serve 8
