New Wellness and Longevity Options are on the Menu at Four Seasons Hotel Westlake Village NEW WELLNESS AND LONGEVITY OPTIONS ARE ON THE MENU (February 7, 2010) – Guests visiting the restaurants and attending special events at Four Seasons Hotel Westlake Village notice new wellness and longevity options are now on the menu. Showcasing the freshest seasonal produce, locally sourced ingredients, whole grains and unprocessed foods, the new menu selections were developed by the hotel’s Executive Chef Mario Alcocer and California Health & Longevity Institute Director of Nutrition Paulette Lambert, a registered dietitian and certified diabetic educator. “Whether visiting locally for the day, or traveling here for business or pleasure, people want to continue to eat healthy while dining out. These options aren’t just created to focus on dieting or weight loss, but to improve the overall nutrition content to prevent chronic disease,” said Ms. Lambert, a nutrition expert with more than 25 years of experience in her field. “We really looked at focusing on getting the most nutrition possible in each meal while having wonderful tasting food.” “Incorporating more nutrition into the menus is a natural fit for our hotel considering the connection to California Health & Longevity Institute located within the Hotel,” said Executive Chef Alcocer. “Many of our guests visit us with a specific health goal in mind, while others want to maintain their healthy eating habits. These choices enable them to restore good nutrition to their meals and revitalize their energy for business or pleasure.” Throughout the hotel, the focus is on incorporating more fruits and vegetables into the menus to help guests achieve the recommended seven to 10 servings per day for optimum health. Each of the recommended dishes is also served in the correct portion size with more produce and less protein enhanced by whole grains with higher fiber and nutrition value. In the Lobby Lounge, longevity options are featured for breakfast and lunch. A healthy start to the day could include a selection from “Fruit, Grains & Yogurt,” featuring the longevity house made granola. The “Healthy Elixirs” section features the antioxidant smoothie, strawberry blast and stress buster, each of which contains three of the recommended servings of fruits and vegetables for the day. For something heartier, several “Healthy Start” entrees are offered such as buckwheat pancakes or the Southwestern tofu scramble. Diners can power up their power lunches with longevity selections featuring a variety of soups, salads and entrees such as the steelhead all natural Shetland organic salmon or halibut fish tacos. The hotel’s fine dining restaurant, Hampton’s, offers diners a choice of Wellness options which are created with no butter or saturated fats while being prepared with the classical techniques. In ONYX, the Asian restaurant, more vegetarian options are offered on the menu in addition to wellness selections which will be noted by the Japanese character for long life. Wellness Options for Meetings and Special Events For individuals planning special events such as weddings, fundraisers or corporate meetings, a variety of new wellness options are available on the banquet menus. Breakfast choices provide energy for the day, and energy-boosting lunch and dinner options are also available. Creative breaks with a nutritious twist provide fuel for the late afternoon’s discussion to ensure maximum productivity. For social events such as weddings, fundraisers and bar or bat mitzvahs, the host or guest of honor’s commitment to a healthy lifestyle can be highlighted through the selection of wellness menu options for an elegant dinner or a cocktail party.
