Ceviche Verde


Spice up your summer dinner party with this refreshing green ceviche recipe from the Wellness Kitchen!

Ingredients for Ceviche

  • 1 lb very fresh fish (halibut or sea bass)
  • 4 cups lime juice
  • 3 tsp salt
  • 1 tsp distilled white vinegar
  • 1 tsp fresh ground black pepper

Ingredients for Salsa

  • 1 bunch cilantro
  • 6 basil leaves
  • 3-4 jalapeno peppers, cut in half and seeded
  • 2 tsp fresh chopped garlic
  • 1 cup spinach
  • 1 cup fresh orange juice
  • 1/3 cup olive oil
  • 1 tsp fresh ground black pepper
  • 2 tsp salt

Ingredients for Garnish

  • 1 green apple, 1/4 inch dice
  • 1 cup fresh pineapple, 1/4 inch dice
  • 1 cup cucumber, 1/4 inch dice
  • 1 cup jicama, 1/4 inch dice


  1. Cut fish into bite size pieces.
  2. In a large container, mix lime juice, vinegar, salt, and pepper. Add cut fish, cover and refrigerate for up to 6 hours.
  3. Place all salsa ingredients in blender or food processor and blend until well mixed or lightly chunky.
  4. Remove fish from marinate and drain well. Place fish in a large bowl and gently mix in the salsa and garnishes.
  5. To serve: Mound on plate and serve with guacamole and baked tortilla chips.
